While I desired to fast during Lent last week, my stomach would not hear any of it, so I just persevered to go meatless while not allowing myself to go hungry. Luckily, my daughter was masipag enough to whip up Lent food in the form of Sardines Pasta. I learned this recipe from my friend Chie, who is also a co-worker. We first cooked this together in the office a few years ago. The recipe's very simple, so my daughter learned it quickly. Here's what she used:
First, she sauteed garlic in olive oil. She then put the spicy sardines and using the ladle, cut the fish into small pieces.
She seasoned it with a some dried basil flakes, a pinch of salt and pepper. After a few minutes of allowing the sardines to be thoroughly heated, she put in the cooked spaghetti noodles and mixed it well with the sardines.
Here's the finished product: Spicy Sardines Pasta!
It's an easy recipe, perfect not just for Lent, but for a quick snack any time of the year. Try it!
